Southern-Fried Catfish with Collard Greens and Cornbread


Prepare yourself for a delicious taste of the South with this classic dish. Imagine succulent, flavorful catfish, coated in a well-seasoned flour mixture and fried to perfection, resulting in a perfect golden, crispy finish. It is served with a side of delicious collard greens and a slice of warm, buttery cornbread that will embrace you in a warm Southern hug and leave you feeling completely satisfied.


Ingredients:

  • 1 pound catfish fillets

  • 1 cup all-purpose flour

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon cayenne pepper

  • 1/4 teaspoon paprika

  • 1/4 cup vegetable oil

  • 1 bunch collard greens, washed and trimmed

  • 1/4 cup chopped onion

  • 2 cloves garlic, minced

  • 1/4 cup water

  • 1/4 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1 box cornbread mix, prepared according to package directions

Instructions:

  1. In a shallow dish, combine the flour, salt, pepper, cayenne pepper, and paprika.

  2. Dredge the catfish fillets in the flour mixture, coating both sides.

  3. Heat the vegetable oil in a large skillet over medium heat.

  4. Add the catfish fillets to the skillet and cook for 3-4 minutes per side, or until golden brown and cooked through.

  5. In a large pot, combine the collard greens, onion, garlic, water, salt, and pepper.

  6. Bring to a boil, then reduce heat to low and simmer for 20-30 minutes, or until the collard greens are tender.

  7. Serve the catfish with the collard greens and cornbread.
