Ingredients:
1 pound catfish fillets
1 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon cayenne pepper
1/4 teaspoon paprika
1/4 cup vegetable oil
1 bunch collard greens, washed and trimmed
1/4 cup chopped onion
2 cloves garlic, minced
1/4 cup water
1/4 teaspoon salt
1/4 teaspoon black pepper
1 box cornbread mix, prepared according to package directions
Instructions:
In a shallow dish, combine the flour, salt, pepper, cayenne pepper, and paprika.
Dredge the catfish fillets in the flour mixture, coating both sides.
Heat the vegetable oil in a large skillet over medium heat.
Add the catfish fillets to the skillet and cook for 3-4 minutes per side, or until golden brown and cooked through.
In a large pot, combine the collard greens, onion, garlic, water, salt, and pepper.
Bring to a boil, then reduce heat to low and simmer for 20-30 minutes, or until the collard greens are tender.
