This breakfast casserole is packed with protein and fiber, making it a great way to start your day! It's also super easy to make and can be prepared ahead of time if you have early mornings that pick up quickly.
Ingredients:
1 pound lean ground sausage/turkey/chicken
1/2 cup chopped onion
1/2 cup chopped bell pepper
1 (10.75 ounce) can cream of mushroom soup
1 (10.75 ounce) can cream of chicken soup
1 cup milk
1 cup shredded cheddar cheese
1/2 cup chopped fresh parsley
1/2 teaspoon salt
1/4 teaspoon black pepper
8 slices whole-wheat bread, cubed
Instructions:
Preheat oven to 350 degrees F (175 degrees C).
In a large skillet, brown the sausage over medium heat. Drain off any excess grease.
Add the onion and bell pepper to the skillet and cook until softened, about 5 minutes.
In a large bowl, combine the cream of mushroom soup, cream of chicken soup, milk, cheese, parsley, salt, and pepper.
Add the sausage and vegetable mixture to the bowl and mix well.
Stir in the bread cubes.
Pour the mixture into a greased 9x13 inch baking dish.
Bake for 30 minutes, or until the casserole is bubbly and the cheese is melted and golden brown.
