Black Bean Soup


This black bean soup is a healthy and hearty lunch option. It's packed with protein and fiber, and it's also low in calories. It's Vegan friendly and soooo good! You won't even miss the meat in this dish. Let's get cooking!

Ingredients:

  • 1 tablespoon olive oil

  • 1/2 cup chopped onion

  • 2 cloves garlic, minced

  • 1 (14.5 ounce) can diced tomatoes, undrained

  • 1 (15 ounce) can black beans, rinsed and drained

  • 1 (15 ounce) can kidney beans, rinsed and drained

  • 4 cups vegetable broth

  • 1 teaspoon cumin

  • 1/2 teaspoon chili powder

  • 1/4 teaspoon salt

  • 1/4 teaspoon black pepper

Instructions:

  1. Heat the olive oil in a large pot over medium heat.

  2. Add the onion and garlic and cook until softened about 5 minutes.

  3. Add the diced tomatoes, black beans, kidney beans, vegetable broth, cumin, chili powder, salt, and pepper to the pot.

  4. Bring to a boil, then reduce heat to low and simmer for 20 minutes, or until the soup has thickened slightly.

  5. Serve hot with YOUR favorite toppings, such as avocado, sour cream, or shredded cheese. These are up to you.
