Soul Food Meets Healthy

Hi everyone, I'm Chef DeJ, and I've been cooking soul food for over 20 years. I love the rich flavors and traditions of soul food, but I also know that it can be unhealthy if not prepared carefully. That's why I'm here to share two of my favorite healthy soul food recipes that are both delicious and quick to make.

Meal 1: Black-eyed pea fritters with collard greens Black-eyed peas are a staple of soul food, and they're also packed with nutrients. They're a good source of protein, fiber, and iron. Collard greens are another nutrient-rich vegetable that's popular in soul food. They're a good source of vitamins A, C, and K, as well as calcium and iron. Ingredients:

  • 1 cup black-eyed peas, cooked and drained

  • 1/2 cup chopped onion

  • 1/4 cup chopped cilantro

  • 1/4 cup whole wheat bread crumbs

  • 1 egg

  • 1 teaspoon garlic powder

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1 tablespoon olive oil

Instructions:

  1. Preheat oven to 400 degrees F (200 degrees C).

  2. In a food processor, combine black-eyed peas, onion, cilantro, bread crumbs, egg, garlic powder, salt, and pepper. Process until smooth.

  3. Form the mixture into small patties.

  4. Heat olive oil in a large skillet over medium heat.

  5. Add the patties to the skillet and cook for 4-5 minutes per side, or until golden brown and cooked through.

  6. Serve with collard greens.

Collard greens Ingredients:

  • 1 bunch collard greens, washed and trimmed

  • 1/4 cup chopped onion

  • 2 cloves garlic, minced

  • 1/4 cup water

  • 1/4 teaspoon salt

  • 1/4 teaspoon black pepper

Instructions:

  1. In a large pot, combine collard greens, onion, garlic, water, salt, and pepper.

  2. Bring to a boil, then reduce heat to low and simmer for 20-30 minutes, or until the collard greens are tender.

  3. Serve with black-eyed pea fritters.

Meal 2: Salmon with roasted sweet potatoes and broccoli Salmon is a healthy and delicious fish that's packed with omega-3 fatty acids. Omega-3 fatty acids are good for the heart, brain, and joints. Sweet potatoes and broccoli are both nutrient-rich vegetables that are popular in soul food. They're good sources of vitamins A, C, and K, as well as fiber. Ingredients:

  • 1 salmon fillet (about 6 ounces)

  • 1 tablespoon olive oil

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1 sweet potato, peeled and diced

  • 1 head of broccoli, cut into florets

Instructions:

  1. Preheat oven to 400 degrees F (200 degrees C).

  2. In a small bowl, combine olive oil, salt, and pepper.

  3. Brush the salmon fillet with the olive oil mixture.

  4. Place the salmon fillet on a baking sheet.

  5. Toss the sweet potatoes and broccoli with the olive oil mixture.

  6. Spread the sweet potatoes and broccoli around the salmon fillet on the baking sheet.

  7. Bake for 15-20 minutes, or until the salmon is cooked through and the vegetables are tender.

These two meals are both healthy and delicious, and they can be prepared in under 30 minutes. So next time you're looking for a quick and easy meal, try one of these recipes. You won't be disappointed! Here are some additional tips for making healthy soul food:

  • Use whole-wheat bread and pasta instead of white bread and pasta.

  • Use lean protein sources, such as chicken, fish, and beans, instead of fatty meats.

  • Use healthy cooking methods, such as grilling, baking, and roasting, instead of frying.

  • Limit your use of salt and sugar.

  • Add plenty of fruits and vegetables to your meals.
